O the dish pit, what a gloriously terrible place! I do my best thinking in said “PIT” like today for instance, today I came up with this idea of the Dish Pit is where you should go to think! In the kitchen we give our tools to someone else to clean and look after! Yes my tools are singular and it doesn’t always work like that in restaurants but how do I get my staff (future hopefully) to buy into my ideals and my need to get as close to perfection as possible? In other words how to I replace ME!? We will have no dishwashers at ODB! I think making dishes a “thought” center a taking pride in your “tools” area of the job (yes you also gotta pay more) is what will work for us. Who knows maybe it’s me just wanting a place to hide out at!
